Ingredients:
For the Cake:
- 1 ¾ cups (220g) all-purpose flour
- 1 ½ cups (300g) granulated sugar
- ¾ cup (65g) unsweetened cocoa powder
- 1 ½ tsp baking powder
- 1 ½ tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup (240ml) milk
- ½ cup (120ml) vegetable oil
- 2 tsp vanilla extract
- 1 cup (240ml) boiling water
For the Topping:
- 1 can of Greek canned peaches, drained (you can use them whole or slice them)
- A little honey or syrup (optional, for extra sweetness)
Instructions:
-
Prepare the Cake:
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Mix until combined.
- Slowly add the boiling water, mixing until the batter is smooth. It will be quite runny, but that’s normal.
- Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then remove it from the pan and allow it to cool completely on a wire rack.
-
Prepare the Topping:
- While the cake is cooling, drain the canned peaches and set them aside. You can slice them if you prefer smaller pieces.
- For a sweeter topping, drizzle some honey or syrup over the peaches.
-
Assemble the Cake:
- Once the cake has cooled, place it on a serving platter.
- Arrange the peaches on top of the cake, either whole or sliced, depending on your preference.
- Optionally, you can drizzle a little extra honey or syrup over the cake and peaches for added flavor.
-
Serve and Enjoy:
- Slice and serve your chocolate cake with the sweet, juicy Greek peaches on top!
This cake has a perfect balance of rich chocolate flavor and the refreshing sweetness of the peaches. Enjoy!
